JAM MUFFINS
(2 POINTS
EACH)
MAKES 10
2 cups Self Raising
FlourMAKES 10
2 Egg Whites
1/4 cup Sugar
3/4 tsp Bicarb Soda
1/2 cup Apple Sauce (in jar)
1/2 tsp Vanilla Essence
1/2 cup Skim Milk
5 tsp Jam of your choice
1. Preheat oven 200 deg cent
2. Coat muffin tray with cooking spray.
3. Beat egg whites, essence and sugar for 1 minute in
a medium size mixing bowl.
3. In a seperate bowl stir bicarb into apple sauce (it
will froth) then add to the bowl.
4. Stir in milk.
5. Gently fold flour in one go, DO NOT BEAT as this
will make the muffins tough. Once flour is just
combined (mixture can look a little lumpy) spoon a
heaped tbs of mixture into 10 prepared muffin cups.
6. Place 1/2 tsp jam in centre of each muffin, then
cover with remaining mixture.
7. Bake for 20 minutes or until cooked.
