DELISH cold picnic pizza

Tomato pasta sauce
4 slices Prosciutto/parma ham
1 ripe avocado
Balsamic vinegar (ideally reduced so its thick but doesnt really matter)
4 Tbsp of Parmesan
Rocket
Black olives in herbs
4 Flour Tortilla
Make some tomato pasta sauce dry frying the onions and garlic so that it is 0 points. I crumble stock into it, lots of herbs and 1 tsp of sugar to sweeten it up. If you dont want to make your own then just buy a basic tomato and basil past sauce.
Bake the tortilla in the oven until they are a little browned and starting to crisp. They will get harder as they cool and this can be done way in advance.
If you are picnicing then you can just pack all the stuff up and make it when you arrive. If at home then do the following:
Spread your 0 point tomato pasta sauce on the tortilla. Cover with Rocket thinly slice the parmesan with a cutter/knife and spread all over. Spread olives all over, share the avocado into 4 equal sections slicing thinly and spreading across the pizza, tear up one piece of prosciutto per pizza and spread around. Drizzle a little balsamic over it all at the end.
Its pretty messy to eat because all you do is break off big pieces and gobble it so make sure you have some napkins! Enjoy, it feels like being in summer in Italy!
If you want to reduce the
points you could remove the avocado and put some chargrilled veggies on it
(this reduces it by 1.5 points)
