Baked Pears with Cottage Cheese and Apricot Sauce


Baked Pears with Cottage Cheese and Apricot Sauce

Serves 4

4 ripe dessert pears
2 tbsp lemon juice
2 tbsp low-fat natural cottage cheese
1 tbsp Splenda
1 small can apricots in natural juice

Preheat oven to Gas 5/180ºC/350ºF
Peel the pears, slice in half and remove the central core.  Place in a bowl containing the lemon juice to prevent them turning brown.  Transfer to an ovenproof dish and cover with foil.
Bake for 15-20 mins until soft
Meanwhile empty the contents of the tin of apricots into a blender and blend to a smooth sauce.
Arrange the pears on a serving plate.  Place a small amount of cottage cheese in the centre of each pear half and pour over the sauce.
