Spinach Frittata


Serves 4

4pp per serving/1pp on F&H


6 Medium Eggs (11)

100ml Skimmed Milk (1)

2 tbsps Parmesan (3)

1 Pepper, diced (0)

1 Onion, diced (0)

250g Spinach (0)

1 Tomato, sliced (0)

Salt and Pepper


Preheat oven Gas 4.

Spray a quiche tin with cooking spray and line base with baking paper.

Blanch spinach in boiling water for 2 minutes until wilted and then drain, squeeze dry and roughly chop.

Spray a wok with fry light and cook onions and peppers for 2-5 minutes.

Scatter spinach, onion and peppers into the bottom of the quiche tin.

Beat eggs and milk together, season and pour over the vegetables.

Add the sliced tomato and then sprinkle the parmesan.

Bake for about 20 minutes until golden brown.

Serve with Home-made chips or salad.
