SAUSAGE PASTA BAKE
Serves 4
Syn Free, if using the cheese as a HEX.
200g wholewheat pasta
150g onion, finely chopped
2 cloves of garlic, crushed
1 red pepper, deseeded and finely chopped
1 yellow pepper, deseeded and finely chopped
8 Syn Free SW sausages
120g cherry tomatoes
100g half-fat mature Cheddar cheese, grated
30g tin of anchovy fillets, drained and finely
chopped - optional
1 sprig of fresh thyme
Pre-heat the oven to 160C/Gas 3.
Grill the sausages until almost cooked
through.
Cook the pasta according to pack instructions.
Drain and refresh with cold water.
Spray a pan well with Frylight and add the
onion, garlic, thyme and anchovies (if using). Cook gently until softened.
Add the diced peppers and cherry tomatoes.
Cook for a further 5 - 10 minutes.
Slice each sausage into three.
Add half the cheese to a large bowl and
combine with the veg from the pan, the cooked pasta and the sausage pieces. Sprinkle
in half a tsp. salt.
Transfer into a large baking dish and sprinkle
with the remaining cheese.
Place in the oven for 15 minutes. Serve immediately.
