HONEY-ROASTED CHICKPEAS
Enough for 2-3 people as a snack (unless you can't control
yourself!).
4.5 Syns for the whole recipe.
400g can chickpeas
1 tsp olive oil - 2 Syns
1 level tbsp. runny honey - 2.5 Syns
Half tsp. cinnamon
Pinch of nutmeg
Pinch of salt
Pre-heat the oven to 190C/Gas 5. Line a baking
tray with non-stick baking parchment.
Drain and rinse the chickpeas and put on a
tea-towel. Pat dry with another tea-towel or kitchen roll. Make sure they are
completely dry.
Spread the chickpeas out on the baking tray
and bake for approx. 50 mins or until crispy. Test one and if it's still a bit
soft, bake for longer.
Put one teaspoon of olive oil, the honey,
cinnamon, nutmeg and salt into a plastic food bag or bowl.
Tip in the chickpeas and mix them around until
covered with the mixture.
Spread out again on the baking tray and return
to the oven for another 10-15 minutes.
Allow to cool before enjoying!
They are best eaten on the day but will keep for one day in an air-tight container. They just might lose some of their crispness.
