THAI PRAWNS WITH RICE & VEGETABLES

Serves 1
Points per serving 8

low fat cooking spray
4 spring onions, trimmed & chopped
½ veg or chicken stock cube dissolved in 150ml water
100ml reduced fat coconut milk
1 tsp Thai red curry paste
120g large frozen peeled prawns
60g frozen rice with mushrooms
60g frozen mixed vegetables
salt & pepper
chopped fresh coriander or parsley, to garnish

Heat wol or frying pan and mist with low fat spray.  Stir fry onions for 2-3 mins until softened.
Add stock, coconut milk and curry paste.  Bring ot boil and add prawns, rice and vegetables.  Cook gently for 5-8 mins.  Season to taste.
Serve garnished with fresh coriander or parsley.

Freeze any unused coconut milk in 100ml portions.
