Taco Casserole

Taco Casserole

1lb Minced Beef (lean!)
1 onion, chpopped
1pkt Old El Paso Seasoning Mix
1 can Old El Paso re-fried beans
1 jar Old El Paso taco sauce (salsa)
7 oz grated cheddar (half-fat, of course!)
pkt tortilla chips or nachos
shredded lettuce
chopped tomatoes
any other nil point salad veg you fancy


1) Heat oven to 400F/Gas Mar 6. Fry Beef and onions together until brown. Drain off the excess fat then stir in Taco seasoning (as directed on packet) Simmer for approx. 10-15 mins.

2) Combine the beans and taco sauce. Using a baing dish layer half the beef then half the beans, some crushed tortillas/nachos, then sprinkle some of the cheese then the remaining beef and beans.

3) Bake for approx. 25-30 mins. Remove from the ven and top with remaining chips and cheese. Bake again for 10-15 mins or until cheese has melted.

4) Remove from oven and to with shredded lettuce and tomatoes
(or you could leave these as side dishes if desired)

5) Serve with half fat creme fraiche (add the extra points) and chillis or other free salad veg.

This should do 4 people.....or maybe more!!!
