SLOW COOKER IRISH BEEF STEW


SLOW COOKER IRISH BEEF STEW

Serves 6
½ syn on Extra Easy

800g of stewing beef
2 tablespoons of flour (3 syns)
Salt and black pepper
Low calorie cooking spray
1 large onion
3 cloves of garlic
2 carrots, roughly chopped
3 sticks of celery, roughly chopped
4 medium potatoes, roughly chopped
500g of swede, chopped
fresh thyme
fresh parsley
2 bay leaves
480ml of beef stock
480ml of vegetable stock



1.
Place stewing beef in a zip lock bag, add the flour, a little salt and black pepper and shake the bag to coat the beef.


2.
Spray a frying pan with low calorie cooking spray and lightly brown the beef, remove and set aside


3.
Add all you vegetables to the slow cooker, top with the meat, add the herbs and cover with the stock.


4.
Set to 6 hours (high setting) or cook on the low (longer setting if you prefer).  Remove the bay leaves (if you can find them).


5.
Divide among 6 bowls and enjoy.
