Mulled Cider

unsweetened apple cider
3 tablespoons sugar
2 teaspoons grated lemon zest
1/4 teaspoon almond essence
1 large apple, cored and cut into eight pieces
1 orange, pitted, white pith removed and cut into eight pieces
4 dried figs, halved
3 whole cloves
1 (4-inch) cinnamon stick

Combine all
the ingredients in a large saucepan set over medium-low heat; stir until the
sugar dissolves and the mixture begins to simmer. Cover, remove from the
heat, and let stand at room temperature for 4 hours. Strain and either reheat
in a medium saucepan over low heat or store in a sealed container in the
refrigerator for up to 3 days
