Cacciatore Slow Cooker

4 chicken breasts,
skinless & boneless
1 onion,
chopped
75g button
mushrooms, sliced
salt &
pepper
1 tsp dried
oregano
½ tsp dried
basil
1 bay leaf
125 ml stock
2 tbsp tomato
puree
Put onion and
mushrooms into pot. Top with chicken breasts. Add seasoning
and herbs, and pour in the stock. Cook on LOW for 8-10 hours or HIGH
for 4-5 hours.
Half an hour
before serving add the tomato puree and baste the chicken with the liquid.
Tip: replace
the stock with wine but this will cost an extra ½ pt per person on points and
on no count/core you will need to count ½ pt per serving for the wine.
