Warm Minted Potato Salad

400g new potatoes
2tbs chopped mint
1 red onion
1 red pepper
2tbs light mayo
2tbs lemon juice
1tbs chopped basil
1tsp honey

1. Boil halved new pototoes for 10-15mins until tender. Drain

2. Combine chopped red onion, red pepper, mint and basil in a bowl. Add the warm new potaotes.

3. Mix the honey, lemon juice and light mayo to make a dressing.

4. Plate the potato mixture (on bed of spinach if desired) and pour over the mayo dressing. Garnish with a mint sprg and red onion rings.
