Potato Salad with Bacon


Potato Salad with Bacon

Serves 4
4 points/serving


800g medium potatoes
small bunch of chives, chopped
1tbsp Dijon mustard
4tbsp low fat mayo
2 medium rashers lean back bacon, cut into small strips
seasoning


Boil potatoes in plenty of salted water for 20-30 minutes until tender, then drain and set aside to cool. Chop into large dice.

Add all other ingredients except the bacon to the potato and toss together.  Dry fry bacon in a non stick frying pan for 5 minutes until really crispy, then scatter over the top of the salad and serve.
