Sweet pepper soup


Sweet pepper soup
From the kitchen of  AMBERTIGER

2 red peppers
1 orange/yellow pepper
1 turnip
2 onions
5 medium sized carrots
4 veg stock cubes
1 teaspoon crushed garlic
1/2 jar passatta
1 teaspoon tomato puree
2 grinds of ground black pepper
a pinch of oregano
8 pints of water.
If you like Hot & spicy try adding a touch of chilli.

Roast peppers till black all over on gas burner place in plastic bag, leave to cool.
Roughly chop turnip, carrots and onions.
Place all ingredients {except peppers} into a large soup pot.

Bring to boil and simmer for 20-30 minutes or until soft.
Puree mixture, (it may need to be thinned down with a little more water until you get the right consistency)

Peel black skin off of peppers and remove stock and seeds, finely chop peppers and add into soup season to taste.
