Mushroom & Pea pilaff
I made this up at the weekend - really delicious and filling, for not too many points. I made this to serve 3 (2 of us, plus extra portion for my lunch today), but you can easily adapt it, using 60g rice per person.You don't really need all these spices, just use whatever you have around.
Serves 3, for 4.5 pts each
1 large onion, chopped
1 tbsp olive oil (2.5pts)
lots of mushrooms, quartered(I guess I used about 300g)
1/2 tsp turmeric
1/2 tbsp hot curry powder
6 whole cloves
2 bay leaves
4 cardamom pods, crushed
1/2 tsp mustard seeds
1 tsp cumin seeds
180g basmati rice (9 pts)
200g frozen peas (2pts)
400ml boiling water

Fry the onion in the oil in a large pan until softened and browned. Add the mushrooms and cook for 2-3 mins until beginning to soften. Add all the spices and cook for 1 minutes. Stir in the rice, then add the peas, boiling water and some salt. Bring to the boil, stir once, clamp on a tight fitting lid and turn the heat right down. Cook for 15 mins, without peeking. Remove the lid, turn off the heat and cover with a clean dry cloth to absorb the steam for 5 mins.
We ate this drizzled with 1 tbsp low fat yogurt (0pts), with a poppadom (1/2 pt each) on the side and 1 tbsp mango chutney (1pt).
