Devils food cake


Devils food cake

Makes 10 slices

100g polyunsaturated marg
150g light brown soft sugar
2 medium eggs
40g plain chocolate (min 70% cocoa solids)
100ml boiling water
150g plain flour
1/2 tsp baking powder
1 tsp bicarbonate of soda
100ml low fat plain yogurt
1 tsp vanilla esence

For the filling:
50g polyunsaturated marg
50g icing sugar plus extra to dust
1 tsp cocoa powder, plus extra to dust

1) Preheat oven to gas mark 5/ 190 C/375F. Spray two 18 cm (7") cake tins with low fat cooking spray, line bases with baking paper and spray again.
2) Cream marg and sugar together until light and fluffy. Add eggs one at a timebeating well between each addition.
3) Break up chocolate into a saucepan, pour boiling water over and heat gently until smooth and thick. Cool a little and then add to the creamed mixture and blend well.
4) Sift flour with baking powder and bicarbonate of soda and add to the mixture the yogurt and vanilla. Mix well and pour into prepared tins and bake for 25 minutes or until risen and a skewer inserted into the centre comes out clean.
5) turn out cakes and leave on a wire rack to cool. EManwhile make filling by beating together the marg, sugar and cocoa powder until fluffy then use to sandwich together the cooled cakes, dust top with icing sugar or cocoa and serve.
