LIVER & APPLE CASSEROLE

Adapted from WW cookbook

Serves 1

½ onion, thinly sliced
1 cooking apple, peeled, cored & thinly sliced
170g lambs liver
salt & pepper
230 ml tomato juice
90g tomato, sliced

Preheat oven to 350ºF/180ºC/Gas 4
Put onion slices in the base of a casserole dish, add half the apple sliced.  Season the liver & put on top of the apple.  Top with the remaining apple and pour in the tomato juice.  Cover & bake for 30 mins.
Put the sliced tomato on top of the dish, return to the oven and cook uncovered for a further 5 mins.

Serve with hot rice.
