Jambalaya

Jambalaya
Serves 4

 

1 Red Pepper, Roughly Diced
1 Green Pepper, Roughly Diced
1 Large Onion, Diced
3 Sticks of Celery, Sliced
150g Diced Cooked Chicken Breast
75g Chorizo (or Spicy, Smoked) Sausage
200g Cooked Long-grain Rice
265g Discovery New Orleans Creole Sauce

  1. Fry the peppers, onions and celery in the oil for 5 minutes.
  2. Add the chicken breast and spicy sausage and cook for a further 2 minutes.
  3. Stir in the Discovery New Orleans Creole Sauce and rice.
  4. Cover and simmer for 5-10 minutes or until piping hot.
Garnish with chopped fresh parsley and serve with crusty wholemeal baguettes and green salad.
