GAMMON & VEGETABLE BEAN POT

Serves 4

2 tsp oil
1 garlic clove crushed
1 lge onion chopped
2 celery sticks, sliced
1 turnip chopped
2 carrots sliced
420g canned chopped tomatoes
450g canned mixed beans in spicy sauce
360 g lean gammon cubed
2 tsp paprika
½ ham or veg stock cube, dissolved in ¼pt boiling water
1 tbsp chopped fresh parsley
2 tbsp cornflour blended with a little water
salt & pepper

Heat the oil in a flameproof casserole or pan and saute the garlic & onion for 2 minutes.  Add tomatoes, beans, gammon and paprika, stirring well and then add the stock and parsley.  Bring to the boil, cover and leave to simmer for 20-25 mins.
Stir in the blended cornflour and cook gently for a minute more.  Season to taste and serve.
