PIZZA PIE

1 tbsp olive oil
2 red peppers,
de-seeded & halved
1 orange pepper,
de-seeded and halved
1 yellow pepper,
de-seeded and halved
1 large red
onion, cut into wedge like strips
145g packet
pizza base mix
1 large garlic
clove, crushed
1 tsp mixed
dried herbs
115g low fat
soft cheese, fromage frais or quark
salt &
pepper
Preheat oven Gas
6/200'C/400'F
Rub the oil over
the base of a shallow and round baking tin, approx 24cm (9½") in
diameter. Lay the pepper halves on the base, skin side down and scatter
over the onion strips. Season well.
Bake in the oven
for 25 minutes until the peppers are slightly charred.
meanwhile make
up the pizza dough as directed on the packet, kneading in the crushed
garlic. Roll out into a large thin circle, large enough to cover the
peppers.
remove the
lightly charred peppers from the oven and sprinkle with the mixed
herbs. Take the circle of dough and lay it over the peppers and
onions. Return the pizza pie to the oven for a further 12-15 mins until
it is risen & golden
Remove from the
oven & turn the pizza out, upside down, onto a large plate or
board. Place blobs of cheese over the peppers and serve at once.
