Enchiladas
(EN-CHEE-LAH-DAS)

1 x
15ml Tbsp Oil
450g Minced Beef
240g Discovery Enchilada Sauce
1 x 400g Tin Red Kidney Beans
100ml Water
4 Discovery Flour Tortillas
50g Grated Cheese
- Heat oil and
brown minced beef. Add chilli powder, 240ml Enchilada Sauce, drained red
kidney beans, water and a little salt.
- Bring to the
boil, cover and simmer for 30 minutes, or until tender.
- Divide filling
between Flour Tortillas, roll them pancake style and place in an
ovenproof dish.
- Pour over
remaining Enchilada Sauce and sprinkle with grated cheese. Cook at
200deg C/ 400deg F/ Gas Mark 6 for 15 minutes.
Alternative
Fillings:
Try minced or flaked chicken, or minced pork.
