Got this one
from my leader - it's YUMMY - noone notices the difference. Should get about
6-8 servings - if 8 It's roughly 2 points per slice
1 packet Ginger Nut biscuits
1 + half tubs of diet cottage cheese
1 packet of Jelly (lemon) –sugar free
Tin of pineapple chunks in juice(NB not syrup)
Bit of butter/margarine (low fat)
Loaf tin (2lb)
• Crush biscuits (put in a bowl/ plastic bag + hit with heavy object – e.g. rolling pin) until fine.
• Melt chunk of butter /marg in a pot + stir in biscuits – normally about one/two tablespoon per biscuits – should kinda bind but not doughy (as then will go soggy).
• Line the loaf tin with tin foil + grease with a bit of butter/marg spoon in biscuits – press down until solid– put into fridge.
Filling
• Drain (+save juice) pineapple chunks, mix in cottage cheese + blend with hand blender or food processor until smooth.
• Meanwhile melt jelly in pineapple juice at a low heat.
• Allow to cool a little + pour in cottage cheese/pineapple mix.
• Pour onto biscuit base + allow to set overnight.
