Apricot Oat Flapjacks


Apricot Oat Flapjacks 

(makes 8)

I found an excellent Flapjack recipe in the Readers Digest 'Low Fat, No Fat' cookbook, each recipe has the fat and calories listed and so it was easy to work out points, here goes:


Per Flapjack - Calories: 235 Sat Fat: 1.0g Points: 3.5

Ingredients:

250g Ready to eat, dried apricots, cut into quarters
400ml Orange Juice
Grated zest of half an orange
50g Crystalized Ginger, roughly chopped
200g Rolled Porridge Oats
3 Tablespoons Light Muscodavo Sugar
25g Sunflower seeds.

Method:

1. Place the apricots in a pan with orange juice and zest and bring to the boil. Reduce heat and simmer, uncovered for 25-30 minutes, until the liquid is absorbed. Puree in a food processor or with hand-held mixer.

2. Meanwhile heat the oven to 180oc, line the base of a 22cm baking tin with baking paper.

3. Stir the ginger, oats, sugar and sunflower seeds into the apricot puree and mix well, then tip into the tin and spread evenly.

4. Bake for 30-35 minutes until firm and golden brown. Cool slightly, cut into eight wedges and leave to cool completely in the tin.


Not bad for 3.5 points each when a normal flapjack would probably be around double that!
