6 1/2 (with cheese)
1x chicken breast
cajun chicken spice
mushrooms (as many as you like)
1/2 tub sainsburys fresh arribiatta sauce (95% fat free)
portion of spaghetti
1tbsn cheese (optional)
Chargrill the chicken breast and coat with the cajun spice (adjust to taste as this stuff is quite spicy)
Cook arribiatta sauce as instructions with the mushrooms(i microwave mine)
Cut the chicken into pieces and add to cooked spaghetti, stir in the arribiata sauce
Mix it all together and sprinkle with optional cheese
This recipe takes about 10 minutes and is a very filling

Ingredients
120 g chicken breast, uncooked, skinless boneless
1 tablespoon oregano fresh, chopped or 1/2 tsp. dried
1/4 teaspoon pepper black, freshly ground
5 spray low-fat cooking spray
1 can tomato(s) large can, chopped
125 ml fresh stock chicken
75 g cooked pasta farfalle (bow tie)
1 portion spring onions finely chopped
Instructions
Place chicken between 2 sheets of greaseproof paper and flatten to an even 1cm
or 1/2-inch thickness. Pat chicken breast with oregano and pepper, coating both
sides. Brown chicken in a small nonstick frying pan coated with cooking spray.
Remove chicken then add tomatoes to frying pan. Add chicken stock and spring
onion. Return chicken to frying pan. Spoon tomato mixture over chicken. Cover
and simmer 15 minutes, turning over once, or until chicken is cooked through.
Serve over pasta.
