Pan Fried Salmon


Pan Fried Salmon 

Serves Four 4 and half points each.

4 Salmon Fillets (5 and half oz/150g each)
4 tablespoons soy sauce
2 tablespoons clear honey
4 tablespoons rice vinegar or lenmon juice (i used lemon juice)
6 spring oninons
For the sauce
zest and juice of 2 limes.
3 teaspoons cornflour mixed to a paste with 1 tablespoon of water.

Put salmon in a bowl side by side. Gently heat soy sauce, honey and lemon juice/rice vinegar in a small pan. Pour this over salmon and sprinkle with chopped spring onions and leave for 30 mins.

Heat grill or griddle pan (i used grill) to high and cook salmon for 5 mins on each side until cooked through.

Pour the remaining marinade back into the small pan with the lime juice and zest and cornflour paste. Boil vigourously for 2 mins stirring as it thickens then serve with the salmon.

It says to serve with 7oz/200g of egg noodles for extra 3 points. I had mine with broccolli and carrots and new potatoes and thoroughly enjoyed it. The sauce is quite tangy so i put it on the broccolli instead of the salmon to liven it up.
