Sweet potato and chilli mash


Sweet potato and chilli mash

Serves 2 core or 2pts serving

200g sweet potato peeled and cut into small chunks
200g celeriac peeled and cut into small chunks
kettle full of boiling water
1/2 red chilli deseeded and chopped finely
50g lf soft garlic and herb cheese
1 tbsp finely chopped fresh chives
1/2 tsp ground coriander
salt and freshly ground pepper

Put the sweet potato and celeriac into a large lidded pan and cover with the boiling water. Bring back to the boil. Cover, reduce the heat and simmer for 15 minutes until tender.
Drain thoroughly and return to the pan. Mash with a potato masher until smooth. Sir in the chilli, soft cheese, chives and ground coriander. Check the seasoning and serve immediately.
