Mini Potato & Chive Cakes

Mini Potato & Chive Cakes

Serves 2

Points plan: 3½ pts per serving
Core recipe if using semolina instead of flour.

375g  potatoes  peeled and grated
1 egg (59g)
1 tablespoon plain flour (use semolina for core)
1 tablespoon finely chopped chives
Salt and pepper to taste

Place grated potato, egg, flour, chives, salt and pepper into bowl.
Mix well to combine and shape into small cakes.
Heat medium non-stick frying pan over medium heat and place cakes in pan.
Cook each side until golden brown (approx. 2 minutes each side).
Serve immediately.
