1 large potato
1 medium egg
Small leek, half an onion, small courgette, sliced
100g very low fat fromage frais
a little skimmed milk
Crushed garlic to taste
salt and pepper

Pre-heat the oven to 180C
Peel the potato and cut into large pieces. Par-boil
for about 10 minutes.
Meanwhile, mix the egg, fromage frais, crushed
garlic together with a fork, and add a little milk to make it a bit more liquid
if necessary.
Season with salt and pepper.
When the potatoes are ready, slice them thinly and
layer them in an ovenproof dish with the sliced leeks/onions etc.
Pour over the fromage-frais mixture, and cook in
the oven for 30-35 mins (stick a knife in to check the vegetables are soft!)
You could sprinkle some grated cheese on top of this dish too but remember to add the extra points.
Serve with a chicken breast/fish, and a green salad.
