Greek Potato Patties
Serves 4

750g potatoes, peeled and chopped
low fat cooking spray
bunch of spring onions, finely sliced
1 red chilli, deseeded and chopped finely
1 tbsp olive oil
1 egg, beaten
small bunch of mint, chopped roughly

Bring a large pan of water to the boil and cook potatoes for 20 minutes until tender. Drain, then mash and season. Spray large frying pan with cooking spray, then sauté the onions and chilli for 2 minutes. Mix onions and chilli together with the olive oil, egg and mint into the potato. Season and leave to cool for 20 minutes.
Preheat grill to medium and shape potato mixture
into 8 patties. Place on foil lined grill pan and grill for 5 minutes on
each side or until golden.
