& Onion Bhajis
3 bhajis ½ pt (original points)
low-fat cooking spray
2 large onions sliced finely
4 large carrots peeled and finely grated in a food processor
Juice of one orange (optional)
3 tbsp plain flour
6 tbsp water
½tsp turmeric
½tsp cumin
½tsp coriander
Set your oven temperature to Gas mark 7/220/425f.
Spritz cooking spray in a pan and fry the onion and carrots until soft and onions are starting to caramelise a bit. Add the orange juice now if desired. Take the pan off the heat.
Add flour, water and spices to the mixture and stir well.
Form 20 balls using 2 spoons and place on a baking tray. I use baking parchment to help stop them sticking.
Bake for 20 mins, then remove them and carefully turn each ball over and return to your oven for about 5-8 minutes.
