Courgettes with Moroccan Spices

Serves 4

Core recipe

1 ¼ lb courgettes sliced lengthways into quarters
lemon juice
chopped fresh coriander and parsley to serve
Charmoula
1 onion
1-2 garlic cloves crushed
¼ red or green chilli de-seeded and finely sliced
½ tsp paprika
½ tsp ground cumin
1 tbsp olive oil
salt and freshly ground black pepper

Preheat the oven to 180 C / 350 F / Gas 4.

Place courgettes in a shallow ovenproof dish or casserole

Finely chop or grate the onion and blend with the other charmoula ingredients plus 4 tbs water. Pour over the courgettes.

Cover and cook for about 15 minutes.

Baste after 15 minutes and return to the oven uncovered for 5-10 minutes until they’re tender.

Sprinkle with the lemon juice and fresh herbs.
