Parsnip Gratin


Parsnip Gratin

Core recipe

2lbs/9oogm parsnips  small ones are sweeter
1 crushed clove garlic
2 teaspoons ground cumin
1 tablespoon chopped fresh parsley
2 tablespoons natural yogurt
salt/pepper

Peel parsnips cut into small chunks and boil in salted water until soft. Drain and mash then fold in the garlic, cumin, parsley and the yogurt. Season with salt and pepper.
Pile in an oven proof dish put under the grill until it's browned on top
