Colcannon

Serves 4

450 g potatoes cooked and mashed
450g green cabbage shredded cooked and drained
Small bunch of spring onions finely chopped
200 ml skimmed milk

Cook the chopped onions in the milk for 5 mins over a low heat. Add the onion milk to the mashed potatoes and cooked cabbage. Beat the mixture and season well
