Leek, Mustard & Chive Mash 

Serves 6

1kg potatoes, peeled
225g baby leeks, finely chopped
3 tbsp virtually fat free fromage frais
1 tbsp coarse grain mustard
2 tbsp finely chopped fresh chives
seasoning
frylight

Cook potatoes in plenty of salted boiling water for 20 minutes.  Spray a non-stick frying pan with frylight and fry leeks until soft.  Drain potatoes well and mash until smooth.  Beat in fromage frais along with the leeks, mustard and chives.  Season well and serve.
