Garlicky Roasted Butternut Squash

1 large butternut squash, peeled and cut into smallish chunks
1 tsp garlic salt or use fresh garlic crushed into a paste

Start by sauteing the squash in fry light and lemon juice until it starts to soften, then add the garlic and mix well. Transfer to a baking sheet or oven dish and roast on Gas 4/5 until it starts to catch at the edges and goes totally soft. This is great on its own or I mash it with yoghurt (add points) and nutmeg and have it as a side
