red onion, finely chopped

tsp cumin seeds

Heat
oven to Gas 5/190ºC/375ºF
Cut
the courgettes in half lengthways and using a teaspoon, scoop out the flesh
leaving a 6mm (¼ ") shell.
Put
the onion in a little water with the cumin seeds and cook a few minutes to
soften the onion. Add paprika and tomatoes, cook 2-3 mins.
Add
carrot and courgette flesh and cook for 5 mins until softened.
Line
an ovenproof dish with foil, place the courgettes into the dish, pile the
carrot mixture into the shells. Bake until the courgettes are soft,
approx 30-45 mins.
