Haricot beans with Tomato (Fasolia Yiahni)

A tablespoon of olive oil really adds something and
makes it 2.5 point for the recipe
300g haricot Beans soaked overnight
1 onion chopped
3 cloves of garlic
1 large carrot chopped
2 stalks of celery including leaves chopped
2 ripe tomoatoes finely chopped
2 tablespoons puree
1 litre of water
4 tablespoons flat leaf Parsley chopped
In a large saucepan sauté the onion garlic carrot and celery until soft and translucent. Add the Tomato puree and the water. Bring to a boil.. Drain the beans and add them to the pan. Add salt and pepper to taste and simmer for an hour or so until the beans are tender. Add the parsley 15 mins before removing from the heat.
