Baked Avocado
½ red chilli, deseeded and finely chopped
1 orange, zest and segments
2 salad onions, finely chopped
1 tbsp olive oil (use less for Core, say 2 tsp!)
1 ripe avocado, cut in half, stone removed
shredded salad onion, to garnish
Preheat the oven to 200C/400F/Gas 6.
In a bowl, toss the chilli, orange segments, chopped salad onions and olive oil.
Place the avocado on a small baking tray. Spoon the mixture into the holes and bake for 6 minutes.
To serve, serve on a small plate with shredded salad onion.
