Spinach & Lemon Mash

Points plan 2½ pts per serving

Serves 4

800g potatoes, peeled and cut into chunks
1 lemon, pricked with a fork
5 tbsp skimmed milk
50g extra light philadelphia
125g spinach

Place the potatoes and whole lemon into a large pan filled with salted water.  Bring to the boil and cook for 15-20 mins until the potatoes are tender.

Drain, remove lemon and mash the potatoes with the milk and philly.  Place spinach into a microwaveable dish, cover and cook for 1 min on full.  Stir the spinach into the mash and season to taste.

Lovely with grilled or griddled fish.
