THAI SPICED CHICKEN
(A take on a Tesco recipe).
Serves 4
4.5 Syns per whole recipe
500g skinless chicken breast, cut into
bite-sized pieces
2 level tbsp. Hellman's Lightest Mayo - 1.5
Syns
1 red onion, sliced
1 red pepper, deseeded and sliced
1 green pepper, deseeded and sliced
1 tbsp. Thai green curry paste - 1 Syn
(Sharwoods)
1 tsp. ground coriander
Juice of 1 lime
1 tbsp. honey - 2.5 Syns
1 small red chilli, deseeded and finely
chopped (optional)
Mix the mayo with the peppers, onion, curry
paste, coriander, lime juice and honey.
Marinate the chicken pieces in the mixture,
covered, in the fridge for at least 30 minutes.
Pre-heat the oven to 200C/Gas 6.
Remove the chicken from the marinade, put in a
shallow dish and cook for 15-20 mins in the oven, stirring halfway through.
Serve with rice, veg and the chilli, if using,
scattered over.
