STEAK AND MUSHROOM STROGANOFF

 

Serves 2

Syn Free

1 red onion, chopped
2 garlic cloves, finely chopped or crushed
1 tsp paprika
1 green pepper, deseeded and chopped
200g mushrooms, sliced
2 tbsp. red wine vinegar
150ml beef stock
200g lean rump steak, cut into strips and all visible fat removed
150ml FF fromage frais

Spray a large frying pan well with Frylight and fry the onion until softened.
Add the garlic and paprika and cook for 2 minutes.
Add the pepper and mushrooms and cook until softened.
Add the vinegar, boil to reduce until almost evaporated, then pour in the hot stock and bubble until slightly thickened.
Add the beef and cook for 2-3 minutes or more, depending on how well you like it cooked.
Remove from heat and stir in the Fromage Frais and season to taste.

Lovely served with rice or tagliatelle and some mange tout and baby sweetcorn.
