SPICY PRAWNS
Serves 4
Syn Free
1 red chilli, medium, deseeded and chopped
(leave seeds in if you prefer a spicier taste)
1 tsp. paprika
1 tsp. medium chilli powder
1 clove of garlic, crushed
1 shallot, diced
2 lemon grass shoots, chopped
5cm ginger, chopped (half tsp. ground ginger)
475g large, uncooked prawns
Put the red chilli, paprika, curry powder,
garlic, shallot, lemon grass and ginger in a blender and whizz until smooth.
Add water, if necessary.
Transfer to a bowl, add the prawns and
marinate, in the fridge, overnight.
Put the prawns onto metal skewers and grill or
barbeque for 2-3 minutes each side.
Serve with salad.
