CHOP SUEY
Serves 4
Approx. 2 Syns per serving
1 large onion, chopped
2.5cm piece of fresh ginger, finely chopped
(could use half tsp. dried instead)
2 cloves of garlic, crushed
3 skinless chicken breasts, cut into bite-size
pieces
1 tbsp. olive oil - 6 Syns
4 tbsp. reduced salt, dark soy sauce
1 tbsp. brown sugar - 3 Syns
Enough dried noodles/vermicelli for 4 people
Saute the onion in the hot oil for 5 minutes.
Meanwhile, be cooking the dried
noodles/vermicelli according to pack instructions.
Add the chicken pieces, garlic, ginger and
brown sugar to the onions and cook for 10 mins.
Add the cooked noodles and the soy sauce and
continue cooking for 10 minutes before simmering on a low heat for a further 5
minutes. Season to taste.
Could also add in some sliced peppers - fresh or frozen.
