Spicy Pasta Sauce

1 large onion
trimmed & chopped
3-4 sun dried tomatoes chopped (use scissors)
2 tbsp tomato puree
1-2 garlic cloves, minced
1 good pinch crushed dried chillies
1 pinch oregano
8fl oz veg stock
16fl oz passata
freshly ground black pepper
Combine the onions, sun dried
tomatoes, garlic, crushed chillies, oregano & stock in a deep frying pan.
Bring to the boil & boil for 3-4 minutes, then simmer until the onions are
tender. Stir in the passata, add the tomato puree and black pepper and simmer
for a further 10 minutes.
