Prawn Layered Salad

Prawn Layered Salad


Serves 1

6pp per serving/1pp F&H


1 Egg (2)

1 Baby Gem Lettuce, Shredded (0)

70g Sweetcorn (1)

1 Carrot, Grated (0)

1/2 Cucumber, Deseeded and Diced (0)

100g Cooked Prawns (2)

3 tbs Lighter than Light Mayo (1)

1 tbs Ketchup (0)

1 splash Hot Pepper Sauce (0)

1 splash of Lemon Juice (0)


Boil the egg in a small pan of boiling water.

Drain and once cool enough shell and slice.

Layer the salad in a bowl starting with the shredded lettuce, then the sweetcorn, grated carrot, diced cucumber, sliced egg and finish with the prawns.

Mix the mayo and ketchup with a dash of Tabasco and lemon juice, then pour over the top.
