LEMON AND
ROSEMARY STICKY MAPLE CHICKEN
Serves 4
0.5 Syns per serving
4 skinless chicken breasts
2 lemons, juiced and zested
2 cloves of garlic, finely chopped
2 shallots, finely chopped
3 sprigs of fresh rosemary, chopped
1 level tbsp. of maple syrup - 2 Syns
With a sharp knife, slice three quarters of
the way through each chicken breast lengthways. Place half the lemon zest and
juice, the garlic, shallots and three quarters of the chopped rosemary in a
plastic food bag.
Spray the chicken with Frylight, season with
salt and pepper and add to the bag. Seal the bag then rub all the ingredients
into the chicken breasts. Chill in the fridge for at least an hour.
Next pre-heat the grill to a moderate heat.
Open the sliced chicken breasts out and lay them on the grill pan and cook for
3 minutes on each side.
Meanwhile, mix together the maple syrup,
remaining rosemary and the remaining lemon juice and zest.
Brush this mixture over the chicken, on both
sides and cook for a further minute on each side.
Once thoroughly cooked through, serve
immediately.
