CHUNKY ITALIAN VEGETABLE SOUP

 

 

2 carrots, peeled and chopped

1 onion, finely chopped

2 celery sticks, finely chopped

200g turnip or swede, chopped in small pieces

1 clove garlic, crushed

2 x 400g can chopped tomatoes

1 tbsp tomato puree

1 tbsp Italian dried mixed herbs

900ml (1½ pints) hot vegetable stock

 

 

NOTE: When using stock cube we use 1 cube for every 1 pint!!

 

15 Minutes to prepare, 25 - 30 Minutes to cook

Serves about 4

 

Try this – its like minestone, without the pasta!!!

 

 

1. Chop the carrots, onion, celery sticks and turnip/swede into small pieces. 

 

2. Put the chopped vegetables into a large saucepan with 1 crushed garlic clove, 2 x 400g cans chopped tomatoes, 1tbsp tomato puree and 1 tbsp Italian mixed herbs.  Pour in 900ml (1 ½ pints) hot vegetable stock, then simmer until all the vegetables are tender about 25 – 30 minutes.

 

3. Season then serve, topped with a few basil leaves, if you have some.  Lovely with hot crusty rolls.
