Christmas Bran Cake
10 Syns for the entire cake (or 6 Syns and 1 Healthy Extra B)
5 Scan Bran
2 beaten eggs
1 tbsp golden syrup
2 level tbsp mincemeat
5 level tbsp sweetener (or
to taste)
1 1/2 tsp mixed spice
Grated zest of a lemon
(optional)
Soak the Scan Bran in
boiling water to soften, before draining and mashing
Mix all of the ingredients
together thoroughly
Pour the mixture into a
microwavable bowl and microwave on a medium heat for about 6 minutes. When cooked,
the cake will be springy to touch and will have pulled away from the sides of
the bowl.
To serve cold:
Top with quark flavoured
with brandy essence for a cold dessert
To serve warm:
Enjoy with low fat custard
(1 Syn for 2 level tbsp) or very low fat fromage frais/ Mullerlight yogurt (no
Syns).
