Chicken Piccata

Chicken Piccata

3 Chicken breasts
2 cans artichoke hearts
Mushrooms 
60ml lemon juice (4 tbsp)
200ml chicken stock


Cut the chicken into small chunks, and sprinkle with seasoning (I use lemon pepper and garlic pepper). Heat a pan and spray with oil .  When the chicken is near done remove it to a separate plate, and add the lemon juice, chicken broth, and mushrooms to the pan. Let them simmer a while - about 8-10 min. Add the chicken back to the pan and simmer a bit more. quarter the artichokes and add them to the pan.

Serve over pasta
