Casserole of Cod Loin

4 medium cod
loin fillets, 1 can chopped tomatoes, 1 small finely chopped onion, 1 lemon,
garlic salt, freshly ground black pepper,several mushrooms,spray oil.
Finely
chop the onion, slice the mushrooms, zest and juice the lemon. Spray the base
of a casserole dish that is both fire and oven proof, heat on the hob. Add
onions and mushrooms and sweat gently to soften. Season cod fillets with garlic
salt and freshly ground black pepper on both sides, and place on top of
mushrooms and onions. sprinkle over lemon zest and add lemon juice. Finally
pour over can of chopped tomatoes, cover dish and cook in a moderate oven for
15 to 20 minutes. Serve with mashed potatoes, or rice (add points as
neccessary) and a bright green veg, eg. spinach, broccoli, green peans (if
using peas add points)
This
recipe produces lots of delicious juice, so is better served with maincrop,
floury potatoes, rather than new potatoes
